Serves 4-6.



500gm minced beef

1 440gm can baked beans

1 425gm can peeled & diced tomatoes

a generous splash of Worcestershire sauce

2 T tomato paste

1 tsp vegemite (or similar yeast extract spread)

1 lg onion diced

1-2 cloves crushed garlic

1T dried mixed herbs

1 500gm packet frozen mixed vegetables

1 can baby potatoes or 2-3 peeled and thinly

sliced potatoes

grated cheese



Fry the onion and garlic in a little oil for 2 or 3 minutes or until

the onion is clear. Add the mince and cook until well browned

breaking any lumps up with a fork or wooden spoon. Add the remaining

ingredients except potatoes and cheese and stir until combined. Pour

into a casserole dish and top with the sliced potatoes and then the

grated cheese. Bake in the oven at 180 degrees (Celsius) for about

half an hour or until the potatoes are tender and the cheese is

melted. (Fresh potatoes may need to be microwaved a bit first as they

take a bit longer to cook).



Serve with garlic bread and enjoy.



I also cook this without the sliced potatoes and cheese on top and

just serve it with mashed potatoes.
