backing pan that has a movable blade riveted in the center and runs
flush against the pan bottom to the edge of the pan and then up along
the side and pointing out. This allows one to, once baking is done,
hold the outer end of this blade and sweep it around pan (sort of like
a compas) and the blade separates the bottom of what you have baked
from the bottom of the pan. Incredibly useful - no more wedging
spatulas....

I have two round cake pans like that. The thing is is they're actually
two different brands. One says Bake King. The other one says Eckoloy.
