I know you *can* do it by hand. But it seems a lot harder than with a
machine. My girlfriend just got a machine, and it's super easy. Hers
cost about $70 at an asian electronics store. Decent ones can be gotten
in the range of $70 - $120, I think.

New Farm Cookbook and probably plenty of places online will tell you how
to do it "by hand" if you want to do it that way. It's definitely
possible.
