There is no "normal" to etiquette, everybody has their own.

If you sell $100 in sushi orders you would giver the itamae $10. But
what if they only tipped you 7 bucks. Now you're out three dollars. Do
I understand you correctly--that he gets his money no matter what?



that's how it was explained to me. yeah, i'll be like $3 dollars out
in your theory. kind of an odd situation here. i think i wold have to
explain to itamae that the tip was $7, so itamae would cut me some
slack.


You said he gets 10%.. doesn't that mean 10% of the tip?
