how much does the server tip the itamae?

There is no "normal" to etiquette, everybody has their own.
If you sell $100 in sushi orders you would giver the itamae $10. But
what if they only tipped you 7 bucks. Now you're out three dollars. Do
I understand you correctly--that he gets his money no matter what?
is that how other sushi places do this?
