I'd be willing to bet that the OP got the lamb at Costco. FWIW, I've
never gotten a bad lamb roast or chop from them; it's all been very good
no matter how it was prepared. I've not been so lucky with lamb from
other sources.

I've also had very good results with frozen New Zealand lamb bought at
Thai/Asian markets.
