The girlfriend cooked one of these for me several years ago. Tenderloin
makes a great sandwich or as the meat course for a meal when cookd this way.
She had a problem pounding them out flat since most mallets used in cooking
are not good for anything other then wall hangers. I bought a hard maple
wood workers mallet and oiled it with vegetable oil until it wouldn't
absorbe any more. Slice the tenderloin to desired thickness place between
layers of wax paper use light strokes and you have the right sized slice in
about six hits. Worked great as a meat mallet and it is easy to clean up as
long as you keep it well oiled.
