Default Dipping Chocolate - Internet Souce

Art, thanks. Gourmail is exactly what I needed. They have several
dipping chocolates listed, though 11 pounds will last me a while!

I appreciate the book suggestion. I am working from the book
"Candymaking" by Kendrick and Atkinson, but if I get more serious into
this project I'll get the Recchiuti book.

As far as which chocolate, it all depends on your taste and your wallet. ;-)
The best chocolate is expensive there is no beating around that. It will
make a huge difference in the final result.

Probably the best economical book on confections is Michael Recchiuti's book
Chocolate Obsession: Confections and Treats to Create and Savor.
