And lastly, there was a sweet, dark sauce along with the fish

The sweet dark sauce is called black soy sauce and is basically soy sauce and
molassess mixed together. It's essential to many thai dishes- especially pad
thai.

Google.com is pretty amazing. You can get a recipe for just about anything
from it- try searching there...?
