It seems too old a reference to be relevant to your book, but the
Oxford English Dictionary mentions the following from 1548.

"1548 Turner Names Herbes (E.D.S.) 78 The greate kynde of thyme,
wherof Dioscorides maketh mention of in Epithymo, is called nowe
*Venetian thyme."

Apart from this the OED gives no citations relevant to Venice Herbs
