I've heard of Mexican style pizzas but how about Tex-Mex pizza,
or
chilizza?
Instead of the usual pizza sauce, how about chili(without
beans)over
the dough, then topped with cheese(mozzarella and mexican),
then
topped with jalapeno peppers and the like.
I've made "pizza" with salsa topped with cheese. Not bad. For a
single serving, I use a couple of flour tortillas instead of
dealing with dough, and just broil.
The's a Faux-Mex place in town here that makes a pretty good mexican
pizza. I've searched for tortillas thick enough but never was able to
locate any. So I started using nan or pita bread. Works great and is
a nice twist. I toss the bread in the toaster oven for a few minutes
while I get the toppings ready. I spread a thin layer of refried
beans first, then seasoned ground beef, pork chicken or steak.
(whever's around) Chopped tomato, onion, black olives, green pepper
and whever else is in the fridge. Then cheese. It bakes in just a
few minutes and the crust is nice and crunchy. Serve with avacado or
guac, sour cream, salsa, nacho slices. Nothing really original but
it's a decent meal in about 15 minutes.
