Being on the frugal side, I use an aluminum baking sheet that has no
sides. I normally put my hearth loaves on parchment dusted with
flour, corn meal or coarse semolina flour, so anything thin and flat
works.
I actually have a large wooden peel hanging on the wall, but I don't
use it -- it's kitchen decoration!
