cooking is honest. being a chef is pompous.
Being a chef w/an attitude like Emeril is pompous. Being a chef is an
interest and perhaps a career.


Regarding old Emeril - I used to think he was the court jester of cooking
until two things happened. First, I went to his restaurant in NO and was
blown away by the food and service. Second, I heard Julia Child say some
very kind and complementary words about him in a biography of her. It's a
reminder to all of us to not judge a book by its cover.
