Default marinating veges in fridge for a week or more

Vinegar, or any acid, tends to soften many foods, which is why most
marinades contain an acid. However, after the food is tender, if it is
left in the tenderizing marinade too long, like more than overnight,
the food will get mushy.

What is the problem with freezing? You seem willing to sacrifice
texture and taste already, why not go with just freezing stuff?

There was someone else asking about this last week, seemed to be very
similar to you. Someone might start thinking you are a troll in this
group.
