Ivan, then about this. That's great that you raise your own. But you still
are going to have costs associated with it. Have you ever figured out your
costs by pound?
Sure. The answer is still zero. I raise two at a time, sell one and a half,
and eat the other half. My customers are happy to pay me $1.50 per pound
base, and I could get $2 easy. I grass-feed only, except that I *do* have to
get them through the winter with a ton of alfalfa.
Moreover, the customers never want the livers, hearts, tongues, brains,
hanging tenders, tails, cheeks, or sweetbreads. I eat all those, with
relish. I could get the tripe, too, but it's a real pain in the ass. Tripe
is so cheap in the Chinese supermarkets that I just buy it there. Got to
have my yang gui and menudo.
Hogs are even more profitable. The rule of thumb is raise six to get one
free. I usually do 12-14 at a time. Haven't for a while but may this fall.
I'd love to do rabbit, but my 12-year-old daughter has absolutely forbidden
me to do that.
