I will only eat it cold at the center. I prefer it charred on the
outside, but will give that up to have the real red middle.
My little dive here cuts the meat as yoiu order-- there are several
loins to choose from at different sizes and breeds. They insist it must
be at least .75 kilo. They use a rosemary branch to brush oil over it,
then grill it in a scissors grill over coals pulled out of the pizza
oven. You can hear it when it goes over those superheated coals. It is
very good steak.
