With the combination of being served Italian Ice at a restaurant lately
and an unusual hot spell here in Western NY, I decided to find a recipe
for an old summertime favorite (teen memories of Revere Beach in
Massachusetts). An internet search came up with this. I always disliked
shaved ice as it is too coarse, but this turned out smooth and great. Give
it a try.... summer approaches.

LEMON ITALIAN ICE
2 cups water
1 cup light corn syrup
1/2 cup sugar
2/3 cup lemon juice (approx. 5 medium lemons)
In heavy, medium sized saucepan, stir together water, corn syrup and
sugar. Heat to boiling over medium-high heat.
Reduce heat to low and simmer, uncovered, 5 minutes. Remove from heat,
cool for 30-45 minutes.
Stir in lemon juice. Pour into 9 inch square baking pan. Cover surface
with plastic wrap.
Freeze 3 to 4 hours, or until frozen but still soft in center.
The Sicilians say 1-2-3
1 part lemon juice
2 parts sugar
3 parts water
Mix, freeze, break up with a fork. Make it in the morning and it is ready
at supper.
