The only deep-fried vegetables that I eat (sparingly) are cooked
Japanese Tempura style. I've never seen mushrooms tempura and I suppose
some preliminary cooking would be needed but probably onion rings, which
I have seen, require some work other than just frying. I may have
mentioned it before but, of all tempura vegetables, I like sweet potato
best but zucchini and other squash aren't bad. You can keep broccoli
tempura but the same applies to broccoli in most shapes and forms!

I love sweet potato tempura too! I have never seen deep fried mushrooms
either, but they might make decent tempura.
I'll do tempura at home every now and again. I usually do sweet
potatoes, zucchini, broccoli, and pickled jalapeno slices. Oh, and
sometimes green beans and shrimp for the kid and for the DH.
