Me, I'd dredge them in flour (seasoned with salt & a good amount of
fresh pepper, plus a little paprika), then brown. Add some very
thinly sliced onion or shallots, some beef stock, and simmer until
the meat is tender and the gravy is thickened. It's simple, but
delicious, especially with a smashed tater or two.
