The only deep-fried vegetables that I eat (sparingly) are
cooked Japanese Tempura style. I've never seen mushrooms
tempura and I suppose some preliminary cooking would be
needed but probably onion rings, which I have seen, require
some work other than just frying. I may have mentioned it
before but, of all tempura vegetables, I like sweet potato
best but zucchini and other squash aren't bad. You can keep
broccoli tempura but the same applies to broccoli in most
shapes and forms!

I love sweet potato tempura too! I have never seen deep fried
mushrooms either, but they might make decent tempura.
I'll do tempura at home every now and again. I usually do
sweet potatoes, zucchini, broccoli, and pickled jalapeno
slices. Oh, and sometimes green beans and shrimp for the kid and for
the DH.

Yes, green beans aren't at all bad. Do you blanch them before
battering? I don't know much about making tempura since I only
have it in Japanese restaurants.

If they're young beans you don't need to blanch, otherwise yes.
