I used to eat dinner for breakfast!!!

This AM:

FBG 98 mg/dl

Canned tuna (2 oz.) mixed with garlic hummus with sharp cheddar cheese on
whole grain/whole wheat toast, grilled cheesed in safflower oil.

1PP 130 mg/dl
2PP 111 mg/dl

Cut the toast in half and you'll be under 120 at 1PP:-)

While I agree with your choices, I'm surprised you thought
Nick's was unusual.

You may like this.

In a small skillet I saute in EVOO some chopped ginger,
onion and garlic, add some stir-fry mix

and gently cook until soft. While that's happening I beat
one egg (sometimes two) and add a pinch of turmeric, a
grating of black pepper and a slosh of fish sauce to the egg
mix. I drain and empty an 85gm can of tuna into the veges
and heat through, then add the egg mix and lightly cover
with grated cheese. It goes under the grill(broiler to you)
until the cheese bubbles and browns.

Usually the 1PP is much the same, or less, than fasting.
