Ivan, would you share your recipe for NC coleslaw and vinegar sauce?

Sure thing. Here's the coleslaw. The celery seeds are the active ingredient.
a.. 1 pound finely shredded cabbage
b.. 1 medium onion, finely chopped
c.. 1 medium green pepper, finely chopped
d.. 1/2 cup vinegar
e.. 1/2 cup sugar
f.. 1/2 cup salad oil
g.. salt
h.. pepper
i.. celery seed

Put cabbage, onion, and green pepepr in a large bowl.
In a saucepan, combine vinegar, sugar, and salad oil; heat to boiling.
Immediately pour over vegetables in the bowl. Add salt and pepper and a
generous sprinkling of celery seed, to taste. Toss to coat vegetables.
Refrigerate coleslaw for several hours or overnight for best flavor.

And here's the vinegar sauce:

3/4 cup apple cider vinegar
3/4 cup white vinegar
2 tablespoons sugar
1/2 teaspoon red pepper flakes
1 teaspoon hot pepper sauce
Salt and pepper

In a medium saucepan combine apple cider vinegar, white vinegar, sugar, red
pepper flakes, hot pepper sauce, and salt and pepper to taste. Bring to a
boil; reduce heat to low and simmer 10 minutes. Keep warm.

It's all a matter of taste, and there are many legitimate variations. I have
a great chow chow recipe, and every once in a while I crack a jar and use it
in a pork sandwich. Yum!
