untrimmed brisket - choice or select?

Happens I bought one of those $1.67/lb briskets from WallyWorld the
other day. They had two. One had nearly 3" of fat on it. The one I took
had at least 2" of fat on it. The label has no meat grade printed on it. I
later found some USDA Choice briskets at my Military Commissary.
They were priced a little higher. Can't remember how much, but they
were not out of sight. The choice briskets looked really good, but alas
I already had one and no space at home for more.
As for reason to choose one or the other. Judge how much fat loss
you're going to have vs price and grade them that way. I don't know
how you determine value, but one criteria of mine is how much food
I net after cooking.
