Default untrimmed brisket - choice or select?

I don't think China is a beef eating country. It certainly isn't in Chinese
food, at least Chinese food in China. Throughout the 20th century beef has
been in our Chinese food, beginning in northern California about 1904, or
so. My question would be where are the Chinese buying the beef.
