About the Salsa you could probably just make the ground beef and potatoes
...then add a couple of Tbsp of Salsa...Old El Paso Thick and chunky salsa
is 3 carbs per 2 tsp. of salsa. The Old El Paso Salsa Garden Pepper Make
Mine Medium is 2g carbs per 2 Tbsp. LA VICTORIA Thick 'N Chunky Salsa, is
1.3 g per 2 tbsp. I think this recipe can be adjusted to please the
Diabetic. I can eat some potatoes without spiking but not rice so guess
we
have to depend on our meters for this one.
Thanks Julie..I will try this one...I'm sure hubby will like it...I might
try it with ground chicken or maybe shredded or diced. Let me know how
your
numbers did on this one.

With potatoes and tomatoes, no matter how low the carb count, many, if
not most of us, spike out of all proportion.

No doubt it's a very tasty recipe, I just don't think it comes close to
being a diabetic recipe.
