Really depends on what type of fining you have. If you are using the
kieselsol/chitosan product, you can rack first, then follow the
directions on the pack for fining addition. If the wine has not had an
addition of metabisulphite lately, it would be prudent to add 1/4
teaspoon of sulphite as well.


Either way is fine; I usually rack off the lees and that give me some
space for the fining. I use bentonite on whites and do trials.
