Default Indirect bbq-ing

DJ,

One of the benefits of BBQ (the process) is that it can turn the least
desirable cuts of meat (brisket, shoulder, etc) into tender, tasty
food that'll definitely keep the guests satisfied!

Exactly!

We were commenting on that last night. A friend had a few of us over and
he roasted a very nice 4.5 lb prime rib roast. It was great - but the
three of us came close to finishing it, and that roast cost considerably
more than a packer cut brisket we did which fed a dozen people with
considerable leftovers.

I think the brisket tasted better, too :-)
