Would you return to a place where the fish was noticeably lacking in
super freshness? That is any hint of a "fishy" taste.
I have returned to places where the fish wasn't super fresh.
Super market sushi is one of them.. the fish isn't super fresh,
but its not rotting. Obviously its not great stuff, but I'll eat
it from time to time.
Also many people live outside of the bigger coastal cities where it's
possible to get excellent sushi. If they want sushi at all, they have
to settle for what's available.
