Sushi in Sydney

Hey folks,
I'm planning my honeymoon in Sydney for next year. Though I've had some
great sushi in the states (Hatsuhanna, Taka Sushi, Sushi Nami) I have been
told that Asian food in Australia is amazing.
Does anyone have a reccomendation for a top notch place in Syd? I'd prefer
a
place where we don't have to order off of a menu; IE somewhere where we
can
let the chef do his magic.

Although the cuisine is a fusion rather than traditional Japanese, you must
try Tetsuya's. There is no menu and the many courses of food served are
tremendous both in quality and presentation. The down side is that it is
very expensive and difficult to get into without reservations well ahead of
time. We were able to get in for lunch and it was well worth the
experience.
