This is true.. or, they're open for dinner but not for lunch.

Quite a few restaurants are closed on Mondays.. not just sushi/Japanese
restaurants.

I had always understood that it was a matter of delivery of fresh fish. The
suspicion is that Monday's sushi is made from Friday's fish. The chef has to
have a day off and Monday sounds like a suitable day!
