Thanks for your reply. I went ahead and did a really light coat of
mineral oil; if I have problems I will repost back.

Thank you for contacting Weston Supply. You can use a
light coat of mineral oil onto the slats when you are storing the unit
in between uses to keep the slats from getting that worn look, but I
would be certain to rinse off the oil completely before using the unit
for juices due to the fact that I am not certain how the oils will
react to different fruits and veggies. It may cause a bit of
separation in the juice as well as may form a film on the top of the
juice after you use the unit to press. If you could go into a bit
more specifics with the unit, like what type of product you up through
it and what your storage procedures are I may be able to provide a bit
more insight.
