Default BBQ Chicken Wing Omlette

A nice "bachelor" recipe utilizing leftovers... a good "morning after"
recipe. Portions may be multiplied for larger serving sizes

2 tablespoons olive oil infused with truffles and porcini mushrooms
1/2 cup thinly sliced onion
2 leftover BBQ Chicken Wings (or equivalent portion of Buffalo Wings)
1 small "Babybel" gruyere cheese
2 eggs (low cholesterol, omega-3 variety preferred)
1/4 cup milk or cream (optional)
Black or four peppercorn mix (black, green, white, red) to taste
Mrs. Dash's Chipotle seasoning to taste
TabascoŽ Sauce to taste

I use Caephalon no-stick pan just to make life easier... and since cheese is
involved, I get all the cheese on my plate and none left stuck to the pan.

First, caramelize the onion in the oil.

While onion is cooking, use sharp knife to shred the meat off of the two
larger bones of the wings. Chop with knife to desired consistency. Feel
free to augment the meat with a bit more of the original BBQ sauce
(optional).

When onion is done, reserve to plate or bowl.

Add the wing meat to the pan. Sauté until hot. Then remove and add to the
onion.

Whisk the eggs with the milk or cream and the Mrs. Dash's and the freshly
ground peppercorn. Pour egg mixture into pan and add the babybel cheese
(coarsely chopped) When egg begins to solidify, fold in the chicken and
onion. Fold, continue cooking, and then serve with TabascoŽ if you like.
