These street vendor pancakes differ in different parts of the country
but this mix comes very close to what I remember
from Verracruz: Mezcla para hacer cachapas

I also spent some time in Venezuela and this packaged mix is very close.
It's pre-cooked yellow corn meal and wheat flour
with a little sugar and turmeric for color. I happen to have a package.
