I use them they way you intend to. One potential problem though, is the
probe wire. It will go bad if you pinch it in a closed door or if it
stays
in contact with a very hot grill for a few minutes. Or if you close the
lid
down on it too hard.

I drilled a hole in the side of my smoker to put the probe through and it

works well that way. The grill has space on the side that is not in
contact
and I just make sure the wire is off the grate. With care, it will last
for
years. OTOH, I've go through quite a few probes do to the problems I
mentioned.

Sounds like the lawyers are trying to ward off complaints from careless
customers.


I've never owned a Polder. I have a pair of no name thermometers which
I suspect are Oregon Scientific basards. The have woven shield probe
wires. They're already several years old. Theyve never suffered a probe
failure. I'm very carefull to not slam a lid on them or let them remain
in contact with a direct heat source. I did have a previous cable probe
therm failure, but it was the main unit that failed. Can't remember what
brand it was.
